Why You Rarely See It at Restaurants
There’s a reason why you almost never see the black vein when you order lobster tails at a restaurant. Many kitchens and seafood suppliers take the time to devein the tails before cooking. In high-end dining, presentation and texture matter. A visible digestive tract doesn’t exactly scream fine dining.
Additionally, many commercial lobsters are purged or held in clean tanks long enough that their digestive tracts are relatively empty by the time they’re cooked.
How to Remove the Vein
If you’re preparing lobster tails at home and spot the vein, removing it is quick and easy. Here’s how:
- Cut the Tail: Cut through the top of the shell down the middle of the tail using kitchen shears.
- Pull Apart the Shell: Gently open the shell to expose the meat.
- Look for the Vein: You’ll see a thin black or greenish line running along the top of the tail meat.
- Remove It: Use the tip of a knife or your fingers to lift it out and discard.
If you’ve already cooked the tail and noticed the vein afterward, it can still be removed the same way.
