The Perfect Cod Fish Tacos

Does anything say summer quite like tacos? Okay – maybe all seafood – and maybe we like them all year round. After making these you’ll understand why they are good enough to add to your weekly menu.

The great thing about these is that they only take a hair more than a half hour to put together and you can get the freshest cod right here at Pine Tree Seafood!

Ingredients
  • 3 tbsp. extra-virgin olive oil
  • Juice of 1 lime
  • 2 tsp. chili powder
  • 1 tsp. paprika
  • 1/2 tsp. ground cumin
  • 1/2 tsp. cayenne pepper
  • 1 1/2 lb. Cod
  • 1/2 tbsp. vegetable oil
  • Kosher salt
  • Freshly ground black pepper
  • 8 corn tortillas
  • 1 avocado, diced
  • Lime wedges, for serving
  • Sour cream, for serving
  • For The Slaw

  • 1/4 c. mayonnaise
  • Juice of 1 lime
  • 2 tbsp. freshly chopped cilantro
  • 1 tbsp. honey
  • 2 c. shredded purple cabbage
  • 1 c. corn kernels
  • 1 jalapeño, minced
Directions
  • Prepare the Marinade

    In a medium bowl, whisk together olive oil, lime juice, paprika, chili powder, cumin, and cayenne.

  • Letting the Cod Marinate

    Add cod into the bowl while tossing until the fish is evenly coated. Let it sit and marinate for 15 minutes.

  • Making the Slaw

    While the cod is marinating, grab a large bowl and whisk together mayonnaise, lime juice, cilantro, and honey. Then stir in the cabbage, corn, and jalapeño. Season with salt and pepper.

  • Time to Cook the Cod

    Heat the vegetable oil in a large nonstick skillet over medium-high heat. Remove the cod from the marinade and season the full filet with salt and pepper. Add fish to the pan flesh side-down. Cook until opaque and cooked through, which is about 3 to 5 minutes per side. Let the cod rest for 5 minutes before flaking into chunks with a fork.

  • Put those tacos together

    Let's get this deliciousness started! Grill up the tortillas and place the fish and corn slaw with diced avocado on top. Squeeze a little lime juice on top and then garnish lightly with some sour cream.
