But overcooking can turn that delicious experience into something tough and rubbery. Here are our tips – straight from the Maine coast – to help you cook your lobster just right.

1. Start with the freshest lobster you can find.

A live lobster will give you the best texture and flavor. At Pine Tree, we partner with local fishermen who bring their catch right in, so you’re getting lobster at peak freshness. Fresh lobster is more forgiving and better suited to precise cooking.

2. Choose the right pot and the right amount of water.

Use a large pot with plenty of room for the lobster. Fill it with enough salted water (about two tablespoons of salt per quart) so the shell is fully submerged and the temperature remains stable when the lobster goes in. Boil the water vigorously before adding the lobster.

3. Know the timing for your lobster’s size.

As a rough guide:

  • 1 lb lobster: cook about 8 to 9 minutes once the water has returned to a boil after adding the lobster.
  • 1½ lb lobster: aim for 10 to 11 minutes.
  • 2 lb lobster: about 12 to 13 minutes.

Because of variations in shell thickness and how quickly your pot returns to boil, always check early – you can always cook a minute more, but you can’t undo overcooking.

4. Use a visual and tactile check rather than just the timer.

When the lobster shell turns a full bright red and the antennae pull out easily, that’s a good sign. One of the best ways: crack the tail gently – the meat should be opaque and firm but still slightly springy. If it looks chalky or the meat pulls away from the shell easily, it may be overcooked.

5. Immediately cool after cooking.

As soon as the lobster finishes cooking, remove it from the pot and plunge it into an ice-water bath or rinse it under cold water to stop the cooking process. This prevents the meat from continuing to cook from residual heat inside the shell. 6. Serve right away – or if you must wait, keep it lightly covered.

Lobster is best enjoyed the moment it’s done. If you’re waiting even 10 minutes, keep the lobster lightly tented with foil so it stays warm without continuing to cook. Avoid earthenware or very hot plates, as they can carry over heat into the meat.

7. A little butter and a good side go a long way.
